How the Machine Works
Water is heated by the selected electric or steam-supply arrangement. Steam fills the insulated cooking chamber, transfers heat to food held on trays, and condenses during the cycle. The operator loads trays, closes and seals the door, selects the cycle where controls are fitted, then unloads only after steam has safely dissipated.
- Feeding: load the specified food, tray or trolley format outside the hot chamber.
- Positioning: place trays in the designated supports or roll the compatible trolley fully into position, then close and seal the door.
- Processing action: generate or admit steam so heat transfers to the load for the validated recipe.
- Control or detection: monitor the selected model timer, temperature, water level, burner, steam or alarm functions using the functions supplied with the selected model.
- Discharge: isolate the heat or steam source, allow steam to dissipate safely, then remove the trays or trolley for the next process step.
- Safety logic: stop loading or unloading when steam, door sealing, water supply, ignition or other required interlocks are abnormal; abnormal loads are handled according to the site's operating procedure.

Hygienic Design and Food-Contact Materials
Stainless-steel cabinet surfaces and removable trays support routine cleaning. Check which surfaces are SUS304 food-contact parts, how condensate drains, whether corners are accessible, and which seals can be removed for cleaning. Do not use abrasive pads on finished panels.
