From Raw Material to Retort: How a Canning Line Works

Every canned product passes through the same core sequence — each stage sized to your product, can format and capacity

1. Receiving & Preparation

Washing, grading and product-specific operations: heading and gutting for fish, peeling and pitting for fruit, cooking and emulsifying for meat.

2. Filling

Solid fillers portion product into cans while liquid fillers dose brine, oil, sauce or syrup heated to 80-90°C. Filling accuracy drives net-weight compliance.

3. Exhausting & Seaming

Exhausting removes headspace air to protect color, flavor and can integrity. A double seamer then closes the can hermetically — vacuum seaming for oxidation-sensitive fish products.

4. Retort Sterilization

Low-acid products are sterilized in pressure retorts at 116-121°C under a validated scheduled process that achieves commercial sterility for shelf-stable storage.

5. Cooling & Drying

Controlled cooling prevents thermal shock and can deformation, followed by drying that prepares cans for labeling without moisture on the surface.

6. Labeling & Packing

Cans are labeled, cased and palletized. Downstream automation is configured to match line capacity and your packaging formats.
