Precision Brix Management & Thermal Control: High-sugar fruits have a significantly lower collapse temperature. If heated too fast during the primary drying phase, the ice melts instead of sublimating, ruining the batch. Our silicone-oil radiant heating plates maintain a strict temperature variance of ±1°C, executing a gentle heat curve that keeps the durian structurally rigid until the final moisture is removed.
Over-Engineered Vapor Defrosting System: Tropical fruits release dense, sticky water vapor. Our oversized vapor condenser prevents ice bridging and includes an automated hot-water defrosting mechanism. Once a batch is finished, the condenser can be cleared of heavy ice buildup in < 30 minutes, drastically cutting downtime between production shifts.
Hygienic and Odor-Isolated Construction: Durian possesses an extreme odor profile that can contaminate other processing zones. The main drying chamber relies on industrial-grade seamless welding and specialized pneumatic door seals that ensure zero atmospheric leakage. Seamless Plant Integration: This lyophilizer is designed for Turnkey factory operations. The raw durian extraction perfectly aligns with upstream sorting via our fresh-cut fruit vegetable processing line. Post-drying, the fragile chunks can be transferred directly to our auto weighing and filling machine to complete the packaging loop without exposing the product to ambient humidity.
The success of premium freeze-dried durian relies entirely on vacuum physics. First, the fresh durian meat is pre-frozen solid in a -35°C deep freezing tunnel. The loaded trolley is then sealed inside the lyophilization chamber, and the dual-stage vacuum pumps evacuate the atmosphere down to < 5 Pa.
During the primary drying phase, the PLC gently raises the temperature of the radiant plates. Because of the extreme vacuum, the ice trapped inside the durian's cellular walls sublimates—turning directly from solid ice into water vapor without ever becoming liquid water. The vapor is instantly captured by the -60°C cold trap. The secondary drying phase then kicks in at a slightly higher temperature to expel bounded molecular moisture, solidifying the sponge-like, crunchy texture that consumers demand.
